From foliage to crisp breezes to stylish wardrobe swaps, there’s a lot to love about fall.

And, in our opinion, spending an autumn afternoon in the kitchen is one of the best things about the change in season. If you’re ready to embrace fall flavors, here’s how to prep your pantry so you’re set up for success, no matter what you make.

Introduce warming spices

Is there anything more inviting than the scents of ginger and cinnamon wafting through a kitchen? Fall is the perfect time to introduce more warming spices into your cooking repertoire–and it doesn’t hurt that they’re good for you, too. Here are a few of our favorite spices to keep stocked up–and ways to incorporate them into your everyday cooking routines. Make sure you have your Evermill rack at the ready!

Ginger – a perfect pie for transitioning from summer to fall, our peach, pistachio, and ginger galette leverages summer fruits like peaches while ushering in fall flavors with a hit of ginger. It’s the perfect September treat.

Cinnamon – our apple fritter doughnuts offer up the perfect, fall-forward spicy mix of cinnamon, nutmeg, and allspice. Ideal for serving when you feel the first chill in the air.

Cumin – this paneer and roasted cauliflower curry is our ideal fall meal. Warming, flavorful, and filling–we find ourselves reaching for this recipe multiple times a week.

Stock up on sundries that last

As the weather gets colder, rain (and sometimes snow) becomes a fixture in the forecast, and layers are a must, trips to the grocery store become far less simple than they were in the warmer months. That’s why we like to ensure we’ve always got some long-lasting sundries on hand so we can whip up a home-cooked meal even on days when heading out on a shop isn’t in the cards.

  • Dried beans & lentils for curry and soup
  • Dried mushrooms, for adding flavor and texture to any salad or pasta dish
  • Canned beans & canned tuna, for throwing together a protein-packed tuna salad
  • Canned pumpkin, for our perfectly autumnal pumpkin muffins–the ideal breakfast, snack, and everything in between
  • Marinara sauce, for quick pasta nights
  • Nutritional yeast, for a shelf-stable, vegan alternative to cheese
  • Nut milk, for curries
  • Nuts, both for snacking and to incorporate into vegetable dishes like our roasted cauliflower with hazelnut
  • Onions and garlic, for adding flavor to any dish
  • Dried pasta

Cook up a broth supply

Bone broth is all the rage right now–it’s one of the healthiest things you can. Not to mention: broth makes the perfect base for a ton of recipes, and it’s easy to make whenever you cook something that has bones. Better yet: it keeps in the freezer for ages. We might be biased, but we’re pretty sure our recipe is the best one we’ve ever had.

Finally, organize your kitchen!

Beyond the pantry ingredients, there are a few things you can swap out and move forward to account for the seasonal shift. Here’s what we do:

  • Give our Dutch oven pride of place, since we spend a ton of time making slow-cooked, big-batch recipes
  • Pack our panini press away in favor of cast-iron skillets
  • Push mugs forward in our drinkware cabinets
  • Store our blenders (but not juicers–we’ll always have our daily green juice)
  • Reshuffle our bar carts: we might find ourselves reaching for whisky more frequently than Aperol as the weather gets chillier (though sometimes, we will reach for both!), so we’ll put our most-used bottles front and center
