Is there anything more refreshing than winding down after a long day with a fresh and fruity cocktail?

Most people love a good margarita, but this recipe takes things to the next level by incorporating deep purple passion fruit (make sure the skin is wrinkled and dimpled before you use–otherwise it’s not ripe yet) for an extra flavorful punch. Cheers!

How to Make It

Serves: 2

Ingredients
  • 1 tsp kosher salt
  • ¼ tsp coarsely ground chili, such as Kashmiri
  • 2 limes
  • 4 purple passion fruits, divided
  • 3 rosemary sprigs, divided
  • 1 tbsp agave nectar
  • Ice cubes
  • 3 oz tequila blanco
  • 1 ½ oz aperol
Instructions
  1. Combine salt and chili on a small plate.
  2. Squeeze 3 tbsp juice from limes. Run used lime half on outer side of two low ball glasses. Dip same side of each glass in salt mixture.
  3. Halve passion fruits, then cut one half into two wedges for serving. Scoop pulp and seeds from remaining passion fruit halves into a cocktail shaker or large jar.
  4. Halve rosemary sprigs crosswise. Reserve two pieces for serving. Add remaining rosemary and agave to vessel with passion fruit. Crush with a cocktail muddler until coarsely mashed.
  5. Fill vessel halfway with ice, then add lime juice, tequila, and aperol. Shake until vessel is very frosty, about 30 seconds.
  6. Fill glasses with ice, then strain cocktail over top. Garnish with reserved passion fruit wedges and rosemary sprigs.

How to enjoy it

If you want to use honey instead of agave, use a runny honey and combine with ½ tbsp warm water in a small bowl. Stir until honey dissolves into a thin syrup.
