Creamy peanut butter and zesty lime juice pair perfectly for signature Southeast Asian flavor. Make it ahead of time and enjoy it as a light weekday lunch, or pair it with protein or on top of soba noodles when you’re looking for a nourishing dinnertime treat.

Ingredients
  • ½ cup peanut butter
  • 2 tbsp lime juice
  • 2 tbsp sesame oil
  • 1 tsp grated ginger
  • 2 tbsp black sesame seeds
  • 5 cups shredded red cabbage
  • 1 cup bean sprouts
  • ¼ cup cilantro, finely chopped, plus more for garnish
  • ½ cup peanuts, toasted
  • 2 green onions, chopped
Instructions
  1. Whisk together the peanut butter, lime juice, sesame oil, ginger and sesame seeds in a medium bowl. Whisk in water, 1 tbsp at a time, until sauce is thick but still loose enough to drizzle.
  2. Combine the cabbage, bean sprouts and chopped cilantro in a large bowl.
  3. Add peanut butter-mixture and toss to combine.
  4. Transfer salad to a large platter.
  5. Top with peanuts, green onions and cilantro leaves, if desired.
