Cook Time: 20 min

Serves: 4

Ingredients

Chicken Wings

  • 2 scallions
  • 2 lemongrass stalks
  • 2 tbsp sesame seeds, toasted
  • 2 tbsp toasted sesame oil
  • 1 tbsp rice wine vinegar
  • 1 tbsp honey
  • 2 tbsp lime juice
  • 1 tbsp lime zest
  • 1 tbsp grated ginger
  • 1 Thai chili, thinly sliced
  • 1 tbsp ground turmeric
  • 1 medium garlic clove, grated
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 lbs (454 g) chicken wings

Dipping Sauce

  • 6 tbsp sesame seeds, toasted
  • ¼ cup toasted sesame oil
  • 2 tbsp honey
  • 2 tbsp rice wine vinegar
  • 2 tsp tamari or soy sauce
  • 1 tsp fish sauce (optional)
  • 1 tsp kosher salt
  • 1 ½ tsp freshly ground black pepper
Instructions
  1. Thinly slice the scallion whites, reserving the dark green tops. Trim lemongrass, then cut into 1-in long pieces. Gently smash pieces with the side of a chef’s knife.
  2. Mix the scallion whites and lemongrass with sesame seeds, sesame oil, vinegar, honey, lime juice, lime zest, ginger, Thai chili, turmeric, garlic, salt, and pepper in a large bowl. Toss the chicken wings in the marinade until well coated. Cover and marinate in the fridge for 1 hour or up to 24 hours.
  3. Preheat oven to 375ËšF. Transfer chicken wings to a parchment-lined baking sheet and discard marinade. Bake for 10 minutes. Turn wings over using tongs and bake for another 10 to 15 minutes or until golden-brown. Let cool on baking sheet on cooling rack for 5 minutes.
  4. Meanwhile, make the dipping sauce. Whisk together the remaining sesame seeds, sesame oil, honey, vinegar, soy sauce, fish sauce, if using, salt, and pepper. Taste and adjust seasoning if needed.
  5. Transfer the wings to a serving dish. Thinly slice reserved scallion greens and sprinkle on top of wings. Serve immediately with dipping sauce.
