This clean but nourishing grilled salmon has become our go-to weeknight meal and is the perfect protein to add to a delicious salad.

Easy to prep and to cook, the full-fat Greek yogurt and fresh chopped dill lend a moist, herbaceous dimension to every single bite. Though this serves four, you may find yourself reaching for seconds, so adjust accordingly.

INGREDIENTS
  • 1 cup full-fat Greek yogurt
  • 1 garlic clove, minced
  • 1 tbsp dill, chopped
  • 1 tbsp lemon zest
  • Juice of two lemons, divided
  • 4 skin-on salmon fillets
  • Kosher salt
  • Freshly ground black pepper
  • Garlic powder to taste

INSTRUCTIONS
  1. Preheat barbecue to high.
  2. Combine yogurt with garlic, dill, lemon zest, and 1 tbsp juice in a small bowl. Season with salt and pepper. Set aside.
  3. Season salmon with salt, pepper, and garlic powder.
  4. Place salmon on grill skin-side down and cook for four to six minutes. Turn fillets over and grill until just cooked through, about minutes.
  5. Remove from grill and transfer to plates. Sprinkle with remaining lemon juice. Serve with yogurt mixture and your favorite salad on the side.
