Yes, there is–spending all of the hard-earned money from those grueling office days on takeout. Then again, we get it. Some of the recipes people seem to be whipping up on a weekly basis seem to require hours, while we’re looking for 30-minute meals. That’s why we decided to do some heavy-lifting on your behalf, and pull together a list of a few of our favorite meals to opt for when time and energy aren’t exactly on our side.
On a Monday, we like to give ourselves something to look forward to. But we’re typically tired, so we prefer not to make treating ourselves feel too ambitious. That’s why this simple nourishing, earthy mushroom pasta that comes together in 25 minutes, is one of our favorite Monday meals.
We’ll say it: not enough people are talking about tartines. They are, quite simply, one of the easiest ways to enjoy a delicious dinner in a pinch. This roasted cherry tomato take is bursting with fresh flavors–and is best enjoyed on your favorite brand of sourdough.
By the time Wednesday rolls around, you might be suffering from a bit of brain fog. A science-backed way to refocus? Salmon. Packed with omega-3s, salmon is one of the best foods you can eat for brain health, so (if your doctor okays it–as with everything we recommend!) we try to throw it on the menu at least once a week. It only takes 25 minutes to make on the grill. If you don’t have a grill, just throw it on your stove.
We love cooking something especially healthy on a Thursday night, with the knowledge that the weekend may hold some lovely indulgences of the culinary kind. Our roasted tomato and quinoa salad comes together in–you guessed it, 30 (well, 35–but we’re going to count it as a 30-minute meal) minutes, packs in a ton of nutrients and is bursting with flavor to boot.
Okay, so this one takes a little longer than 30 minutes, but that includes 20 minutes of cooking time and it is Friday, after all. Plus, once you taste the umami flavors of this warming, delicious Udon soup, you’ll understand why it was time well-spent. Best enjoyed in front of a movie or your favorite show as the perfect way to round off the week.
