We’d be hard pressed to think of something better to start your day with than a healthy dose of fruits & veg via a delicious green smoothie.

This one is the perfect alternative to green juice, since blending means you keep all of the fiber that juicing removes. It’s bright, fresh, and zingy thanks to a kick of ginger. Don’t be put off by the addition of bee pollen: it’s got tons of purported health benefits and it’s easy to find at your local health food store.

How to Make It

Serves: 1 to 2 (Makes 4 cups)

Ingredients
  • 2 cups loosely packed baby spinach
  • 1 granny smith apple, cored and cut into 1-inch pieces
  • 1 celery stalk, roughly chopped
  • 1 cup roughly chopped cucumber
  • 1-inch piece ginger
  • 1 lemon, juiced
  • 2 tbsp honey
  • 2 tsp bee pollen
  • 4 ice cubes
  • ½ cup water
Instructions
  1. Place spinach in blender, followed by apple, celery, cucumber, ginger, lemon, honey, pollen, ice and water. Blend on high until smooth.
  2. Divided between serving glasses.

How to enjoy it

This makes four cups which you can enjoy all in one serving or divide between two days and have your green smoothie ready for the next morning!
