Like just about everyone else, we love strawberry jam.

What we don’t love: strawberry jam is often processed and packed with sugar and pectin. Our secret alternative ingredient: chia seeds. To take the flavor even further, we reduce fresh (quality is important here, given how few ingredients there are) strawberries to create a jammy flavor and quicken the thickening. A high-quality honey helps create the perfect level of sweetness, too.

Serves: 8

Ingredients
  • 3 cups diced strawberries
  • ⅓ cup good-quality honey
  • 1 vanilla bean, split and seeds scraped
  • 4 tsp milled black chia seeds
  • 1 tsp fresh strained lemon juice
Instructions
  1. Finely crush strawberries, using a potato masher, in a medium-size saucepan. Stir in honey, vanilla seeds, and pod. Bring to a full boil, then reduce heat to medium and simmer, stirring occasionally, until color has intensified, and mixture is saucy, about 6 to 8 minutes. Remove from heat and immediately stir in chia seeds, and lemon juice. Transfer to a 2-cup resealable jar. Cover, then refrigerate until chilled and thickened, at least 3 hours, but preferably overnight. Discard vanilla pod before serving.
