This clean but nourishing grilled salmon has become our go-to weeknight meal and is the perfect protein to add to a delicious salad.
Easy to prep and to cook, the full-fat Greek yogurt and fresh chopped dill lend a moist, herbaceous dimension to every single bite. Though this serves four, you may find yourself reaching for seconds, so adjust accordingly.
How to Make It
Ingredients
- 1 cup full-fat Greek yogurt
- 1 garlic clove, minced
- 1 tbsp dill, chopped
- 1 tbsp lemon zest
- Juice of two lemons, divided
- 4 skin-on salmon fillets
- Kosher salt
- Freshly ground black pepper
- Garlic powder to taste
Instructions
- Preheat barbecue to high.
- Combine yogurt with garlic, dill, lemon zest, and 1 tbsp juice in a small bowl. Season with salt and pepper. Set aside.
- Season salmon with salt, pepper, and garlic powder.
- Place salmon on grill skin-side down and cook for four to six minutes. Turn fillets over and grill until just cooked through, about minutes.
- Remove from grill and transfer to plates. Sprinkle with remaining lemon juice. Serve with yogurt mixture and your favorite salad on the side.
