Cava is the perfect sparkling wine for making these delicious mimosas as its dry style balances out the sweet flavours of blood oranges and cassis.

If you’re squeezing your own orange juice yourself, make sure to chill it in the fridge alongside the cava. This will make sure your drink is properly chilled when assembling.

Ingredients
  • 2 oz fresh blood orange juice, chilled
  • 1 oz Crème de Cassis
  • 4 oz Brut Cava, chilled
  • Blood orange wedge and rosemary sprig, to garnish
Instructions
  1. Combine blood orange juice with cassis in the bottom of a champagne flute. Very slowly pour over cava. Garnish with orange wedge and rosemary sprig. Serve immediately.
