Yogurt Parfaits with Rhubarb and Granola

These pretty, brunch-worthy parfaits are layered with a vanilla-studded rhubarb compote and from-scratch nutty granola with thick Greek yogurt.

You can make both the compote and granola ahead of time for quick and easy entertaining.

INGREDIENTS
  • ¼ cup Rhubarb Compote with Vanilla Bean (recipe below)
  • ¾ cup whole milk Greek yogurt
  • ¼ cup Toasted Almond & Hazelnut Granola (recipe below)

INSTRUCTIONS
  1. Spoon compote into the bottom of a glass or jar. Add yogurt, using the back of a spoon to evenly spread. Top with granola. Serve immediately.

Rhubarb Compote with Vanilla Bean

Overall Time: 50 min

Prep Time: 10 min

Cook Time: 10 min + 30 min cooling time

Serves: 6

INGREDIENTS
  • 4 cups rhubarb, sliced 1-inch thick
  • ¾ cup granulated sugar
  • 2 tbsp water
  • Seeds from 1 vanilla bean

INSTRUCTIONS
  1. Combine rhubarb with sugar, water and vanilla seeds in a medium saucepan. Bring to a boil over medium-high heat then reduce heat to medium and cook, stirring often, until rhubarb has fully broken down and mixture is saucy, about 10 minutes. Let cool for 30 minutes, then scrape into a jar. Cover and refrigerate for up to a week.
