The meatloaf may get a bad rap, but we’re convinced that anyone turning up their nose simply hasn’t tried our version. We’ve given this classic comfort food a gourmet upgrade, layering in rich seasonings and deeper flavors that transform it from ordinary to unforgettable. One bite, and you might just become a meatloaf believer.

INGREDIENTS
Meatloaf:
  • 2 lbs lean ground beef
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 eggs
  • 1/2 cup milk
  • 2 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 2 tbsp chopped parsley (optional)
  Meatloaf Glaze:
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce

INSTRUCTIONS
  1. Preheat oven to 375°F. Line a baking sheet or lightly grease a loaf pan.
  2. Cook the onion in a little butter or olive oil for about 5 minutes until soft. Add garlic for 30 seconds.
  3. In a large bowl combine breadcrumbs, milk, eggs, Worcestershire, ketchup, and Dijon mustard. Let sit for 2 minutes so the breadcrumbs soften.
  4. Add the beef, onion mixture, seasonings, and parsley. Mix gently — do not overwork the meat or the meatloaf can become dense.
  5. Form into a loaf shape on the baking tray or place into a loaf pan.
  6. Mix glaze ingredients and spread half over the top. Bake for 45 minutes.
  7. Add the remaining glaze and bake another 15–20 minutes until fully cooked through. Internal temperature should reach 160°F.
  8. Let the meatloaf rest for 10 minutes before slicing to keep it juicy.
