Summer Roll Crudité with Peanut-Hoisin Dipping Sauce

INGREDIENTS
  • ½ cup natural, smooth peanut butter
  • 3 tbsp hoisin sauce
  • 1 tbsp fresh lime juice
  • 1 ½ tsp sambal oelek
  • ½ garlic clove, finely grated
  • ½ tsp finely grated ginger
  • ¼ tsp cane sugar
  • ⅓ cup cold water
  • Chopped roasted unsalted peanuts and Thai basil leaves, to garnish
  • Rainbow carrots, Persian cucumbers, radishes, and romaine heart leaves, for serving

INSTRUCTIONS
  1. Whisk peanut butter with hoisin, lime juice, sambal, garlic, ginger, and sugar in medium bowl to roughly combine. Stream in water, whisking until mixture is smooth and fully emulsified. Scrape into a serving bowl, then sprinkle with peanuts and basil.
  2. Arrange on a platter alongside vegetables. Serve immediately.
