Summer Peach, Tomato & Burrata Salad

Sweet peaches, ripe tomatoes, creamy burrata, and fresh mint are all brought together with a simple vinaigrette and a drizzle of balsamic syrup.

INGREDIENTS
Salad:
  • 4 ripe peaches, sliced into wedges
  • 3 large ripe tomatoes, cut into wedges
  • 1 ball of burrata cheese
  • 1 generous handful of fresh mint leaves, torn
  • Fresh mint flower tips, for garnish
  • Flaky sea salt
  • Freshly cracked black pepper
Vinaigrette:
  • ⅛ cup Olive & Lavender Farms extra virgin olive oil
  • ⅛ cup high-quality red wine vinegar
Finish:
  • Balsamic syrup (or balsamic glaze), for drizzling

INSTRUCTIONS
  1. In a small bowl or jar, whisk together the Olive & Lavender Farms extra virgin olive oil and the red wine vinegar.
  2. Arrange the peaches and tomatoes on a serving platter.
  3. Tear the burrata into generous pieces and nestle it among the peaches and tomatoes.
  4. Drizzle the vinaigrette evenly over the salad.
  5. Finish with a light drizzle of balsamic syrup.
  6. Season with flaky sea salt and freshly cracked black pepper.
  7. Scatter the torn mint leaves over the salad and finish with fresh mint flower tips for an elegant garden-inspired presentation.
