Spiked Strawberry Italian Sodas

There is nothing more refreshing than a cool drink on a hot day.

Our homemade, Italian-style spiked soda is about to make your summer. From infusing fresh strawberries into simple syrup to an optional final splash of St. Germain or Grand Marnier, we promise this is the type of cocktail you’ll be batching again and again.

INGREDIENTS
Strawberry Syrup
  • ¾ lb (340 g) strawberries, hulled and halved, about 2 ¼ cups
  • Seeds and pod from 1/2 vanilla bean
  • 1 ½ cups water
  • 1 ½ cups granulated sugar
  • 2 tsp fresh lemon juice
Soda
  • 1 oz Rose Gin or Vodka
  • 4 oz sparkling water
  • Strawberries, to garnish

INSTRUCTIONS
  1. For the syrup, line a large fine-mesh sieve with 2 single layers of cheesecloth. Place over a 4-cup liquid measuring cup and set aside.
  2. Combine strawberries, vanilla seeds, pod, and water in a medium saucepan. Bring to a boil, then reduce heat to medium-low and simmer, covered with a tight lid, until berries are tender and have released their vibrant colour, about 15 minutes. Add sugar, stirring until fully dissolved, 1 minute. Remove from heat and stir in lemon juice.
  3. Pour mixture through prepared sieve, gently pressing liquid out from strawberries. Transfer to a mason jar, cover with lid and chill for 2 hours, up to 5 days.
  4. For the soda, combine 2 oz strawberry syrup with rose gin in the bottom of a highball glass filled with ice. Very slowly pour over sparkling water, stirring lightly to combine. Garnish with fresh strawberries. Serve immediately.
