Spiced Summer Plum Compote

Published Sep 18

Summer meets fall in this delicious plum compote.

This compote is perfect for making ahead then spooning over a bowl of yogurt with toppings like toasted coconut or flaked grains. While we love having this ready to go in the fridge, you can also serve it warm overtop of oats (or even ice cream!).

How to Make It

Difficulty: Easy

Overall Time: 3 hours 35 minutes

Prep Time: 10 minutes

Cook Time: 15 minutes, plus 3 hours 10 minutes chilling time

Serves: 8 (makes 2 cups)

INGREDIENTS
  • 4 large red plums, pitted and sliced into thin wedges, about 4 cups
  • 1/2 cup granulated sugar
  • 1/4 cup wildflower honey
  • 6 green cardamom pods
  • 1 cinnamon stick
  • 1/4-inch slice fresh ginger, peeled
  • 1/2 tsp fresh strained lemon juice

INSTRUCTIONS
  1. Combine plums with sugar, honey, cardamom, cinnamon and ginger in a medium-size saucepan. Bring to a full boil, then reduce heat to medium and simmer, stirring occasionally, until fruit has broken down and mixture is saucy, about 15 minutes. Remove from heat and immediately stir in lemon juice. Let cool for 10 minutes then transfer to a 2-cup resealable jar and refrigerate until chilled at least 3 hours. Remove cinnamon sticks, cardamom pods and ginger before serving.
