Smashed Cucumber Salad with Feta, Sumac and Tender Herbs

We love a gorgeous salad that tastes just as good.

This Greek-style smashed cucumber salad fits the culinary and visual bill: it looks and tastes amazing. The smashing of the cucumbers allows for extra nooks and crannies for the citrusy dressing to get stuck into. Top tip: use a high-quality sheep or goat milk feta for the best possible flavors.

INGREDIENTS
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp fresh Meyer lemon juice
  • 1 tsp honey
  • ¼ tsp sumac
  • ¼ tsp ground allspice
  • ¼ tsp kosher salt
  • 1 ½ English cucumbers
  • ½ pkg (200 g) good-quality feta cheese, sliced
  • ¼ cup toasted sliced almonds
  • ¼ cup mint leaves
  • 2 tbsp torn dill sprigs

INSTRUCTIONS
  1. Whisk oil with lemon juice, honey, sumac, allspice, and salt in a large bowl. Set aside.
  2. Cut cucumbers in half lengthwise. Smash with the back of a heavy knife just to break open. Roughly slice into 1-in thick pieces on the bias. Add to oil-mixture, tossing to fully coat.
  3. Transfer cucumbers to a large platter, then tear feta slices overtop. Sprinkle with almonds, then top with mint and dill. Serve immediately.
