Published Sep 28

This beef stew is a cold-weather classic.

The key to this comforting dish is to slowly cook the stew for at least six to seven hours. By the time it’s ready to serve, you’ll find that the beef melts like butter. It’s one of the most delicious weekend dinners worth slowing down for.

How to Make It

Difficulty: Easy

Overall Time: 9 Hours

Prep Time: 30 min

Cook Time: 6 - 7 hours

Serves: 4 to 6

INGREDIENTS

For the stew:

  • 2 steaks, salted and cut into cubes
  •  Butter, for sautéing
  • 1 onion, chopped
  • Potatoes and carrots, chopped
  • Fresh thyme
  • Crushed tomatoes
  • 1/4 tsp paprika
  • 1/4 tsp oregano
  • 1/4 tsp Italian seasoning
  • Salt and pepper to taste

For the parsley pastry:

  • 2 cups flour
  • 1 tablespoon baking powder
  • Fresh parsley, finely chopped
  • ¾ cup milk or cream, plus a splash more if needed
  • Salt and pepper

INSTRUCTIONS
  1. Sauté the onion in butter. Add the beef, potatoes, carrots, thyme, crushed tomatoes and seasonings. Cover and cook gently on low for six to seven hours, until the beef is tender. Add a splash of water if the stew needs more liquid as it cooks.
  2. Mix the flour, baking powder, parsley, salt and pepper. Stir in the milk or cream until you have a soft dough. Refrigerate for an hour, then roll it out and put it on top of the slow cooked stew.
  3. Bake at 350°F (175°C) for about 30 minutes, until the pastry is golden and cooked through.
  4. Serve with a salad and your favorite Casa de Suna vinaigrette.
