Radishes with Herbed Sweet Butter and Flaky Salt

A gentle twist on one of the most delicious ways to eat radishes, this version features an herbed butter filled with chives and dill.

You can blend the butter by hand for ease or blitz it with an immersion blender to give it a green and spring-y hue.

Serves: 6 to 8

INGREDIENTS
  • ¾ cup unsalted butter, at room temperature
  • 2 tbsp very finely chopped chives
  • 1 tbsp very finely chopped dill
  • 2 bunches radishes, washed well
  • Flaky sea salt, to garnish

INSTRUCTIONS
  1. Stir butter with chives and dill in a small bowl until fully combined. Alternatively, the mixture can be blitzed using an immersion blender, scraping down the bowl and blades hallway through, until vibrant green and smooth. Scrape into a serving bowl.
  2. Arrange on a platter alongside radishes and flaky salt. Serve immediately.
