ICYMI: fat-washing is having a moment in the mixology world. It’s the process of infusing a spirit with the flavor of a fat source. For our take, we used EVOO with gin, then mixed it with the classic martini staples for a refreshing, full-bodied twist. Bonus: the leftover infused gin can also be used for Negronis and other gin-based cocktails. Cheers!
