Lemon Parmesan Pasta with Basil

This just might be the ultimate summer dish.

A bright, buttery summer pasta with lots of fresh basil, lemon, Parmesan and cracked black pepper. Simple, fresh and so good served with a crisp herb salad on the side.

INGREDIENTS
  Lemon Parmesan Pasta with Basil:
  • 1 lb pasta
  • 1 stick (1/2 cup) butter
  • 1/8 cup freshly squeezed lemon juice
  • A generous bunch of fresh basil, roughly chopped, plus a few sprigs for serving
  • 1/8 cup reserved pasta water
  • Lots of freshly grated Parmesan cheese
  • Freshly cracked black pepper
  • Sea salt
Fresh Herb Salad with Lemon Vinaigrette:
  • 1/8 cup Olive & Lavender Farms olive oil
  • 1/8 cup freshly squeezed lemon juice
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste

INSTRUCTIONS
Lemon Parmesan Pasta with Basil:
  1. Bring a large pot of water to a boil and salt it generously - it should taste like the sea.
  2. While the pasta cooks, melt the butter in a large pan over medium-low heat. Add the chopped fresh basil and gently saute it in the butter until fragrant.
  3. Add the 1/8 cup fresh lemon juice, stir everything together and remove the sauce from the heat.
  4. Cook the pasta until al dente. Before draining, reserve some of the pasta water.
  5. Return the drained pasta to the pot and add 1/8 cup of the reserved pasta water. Pour over the warm lemon-basil butter and toss until every strand is beautifully coated.
  6. Add a very generous amount of freshly grated Parmesan and plenty of freshly cracked black pepper. Toss everything together until the Parmesan, butter and pasta water create a silky, glossy sauce.
  7. Taste and add a little more sea salt, lemon, Parmesan or black pepper if needed.
  8. Pile into a serving bowl and finish with another shower of Parmesan, a generous crack of fresh black pepper, and a few beautiful sprigs of fresh basil over the top.
Fresh Herb Salad:
  1. Whisk the olive oil and fresh lemon juice together. Season with sea salt and freshly cracked black pepper.
  2. Toss your salad greens with plenty of freshly chopped herbs, then drizzle with the lemon vinaigrette just before serving.
  3. Serve alongside the warm Lemon Parmesan Pasta.
