Leftover Turkey Lettuce Wraps

Lettuce wraps are a welcome way to use up all that leftover turkey after feasting for the holidays.

When preparing the turkey filling, be sure to wait to add the salt until it’s all mixed together. That way, you can adjust the seasoning to taste based on how well seasoned your bird was to begin with.

INGREDIENTS
  • ½ cup mayonnaise
  • ¼ cup crème fraiche
  • 1 ¼ tsp medium curry powder
  • 1 tsp fresh strained lemon juice
  • 3 cups shredded roasted turkey
  • 1 celery stalk, finely diced
  • ¼ tsp kosher salt, if needed
  • 1 head butter lettuce, leaves separated
  • 1 crisp apple, thinly sliced
  • Mint leaves or finely chopped chives, for serving

INSTRUCTIONS
  1. Whisk mayonnaise with crème fraiche, curry powder and lemon juice in a medium bowl. Add turkey and celery, stirring to fully coat. Season with salt, if needed.
  2. To serve, arrange turkey mixture, lettuce leaves, apple and herbs on serving plates and in bowls. Build wraps by spooning ingredients onto each lettuce leaf. Serve immediately.
