Grilled Salmon Skewers

Published Sep 11

Salmon is the ideal fish for grilling.

Its firm texture holds its shape and quickly cooks keeping it incredibly juicy. A short marinate in the fridge helps incorporate the flavours while waiting for the skewers to soak. If you’re low on time, metal skewers can be used, and the marinating time can be skipped.

How to Make It

Difficulty: Easy

Overall Time: 1 hour 5 minutes

Prep Time: 25 minutes, plus 30 minutes marinating time

Cook Time: 10 minutes

Serves: 4 to 6

INGREDIENTS
  • 8 to 10 bamboo skewers
  • 3 tbsp extra virgin olive oil, divided, plus extra to garnish
  • 1 1/2 tsp kosher salt
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cardamom
  • 1/2 tsp turmeric
  • Freshly ground black pepper
  • 750 g (1.65 lbs) skinless salmon fillet, cut into 1-inch pieces
  • 2 medium zucchinis, ends trimmed
  • Lemon wedges, for serving

INSTRUCTIONS
  1. Soak bamboo skewers in water for 30 minutes.
  2. In a large bowl, combine 2 tbsp olive oil, salt, cumin, coriander, cardamom and turmeric. Season generously with fresh pepper. Add salmon, tossing to fully coat. Refrigerate, 30 minutes.
  3. Using a mandoline or vegetable peeler, thinly slice zucchini lengthwise into ribbons and set aside.
  4. Preheat grill to medium-high.
  5. Gently toss zucchini with remaining 1 tbsp olive oil in a medium bowl. Weave zucchini onto skewers in an accordion-like pattern, alternating with salmon pieces.
  6. Grill skewers, with the lid down, turning halfway through, until fish is lightly charred and cooked through, about 6 to 8 minutes.
  7. Serve skewers on a platter. Garnish with olive oil and serve with lemon wedges.
