Green Goddess Picnic Salad

Summer in salad form!

We’d be hard-pressed to find anyone that didn’t adore green goddess dressing, and it’s even more delicious paired with our seasonal favorites: gorgeous tomatoes and cucumbers that hold up no matter the heat. Make this dressing ahead and keep it in the fridge. You’ll find yourself reaching for it as a staple all summer long.

INGREDIENTS
Green Goddess Dressing
  • ½ cup chopped cilantro leaves and tender stems
  • ¼ cup chopped dill, plus extra to garnish
  • ¼ cup chopped mint leaves, plus extra to garnish
  • ½ cup 5% Greek yogurt
  • ¼ cup mayonnaise
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • ½ small garlic clove, finely grated
  • ¼ tsp kosher salt
Salad
  • 2 large heirloom tomatoes, cut into wedges
  • 1 medium vine-ripened tomato, sliced into half moons
  • 3 Persian cucumbers
  • ¼ tsp flaked sea salt
  • Freshly ground black pepper

INSTRUCTIONS
  1. Add cilantro, dill, and mint to the bowl of a food processor. Pulse, scraping down sides if needed, until very finely chopped. Add yogurt, mayonnaise, oil, lemon juice, garlic, and salt. Process until dressing is vibrant green and smooth, 1 to 2 minutes.
  2. Spoon some dressing over the bottom of a large platter. Arrange tomatoes overtop. Slice cucumbers lengthwise in half, then cut on the bias into 1-inch pieces. Arrange with tomatoes. Season with salt and pepper. Drizzle over more dressing. Top with additional herbs. Serve immediately with remaining dressing.

How to Store It

Dressing will keep, refrigerated, in an airtight container for up to 3 days.
