Charred Corn Salad with Tomatoes and Lime Dressing

A quick char on the grill makes in-season corn even sweeter.

Paired with juicy tomatoes and a quick lime dressing, this salad brings plenty of bright flavours and textures for a delicious dinnertime side or standalone meal when served with crusty bread.

INGREDIENTS
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp fresh strained lime juice
  • ½ tsp honey
  • ¼ tsp kosher salt
  • Freshly ground black pepper
  • 4 medium corn cobs, shucked
  • 2 cups halved cherry tomatoes
  • ¼ cup finely chopped cilantro, plus extra to garnish
  • 2 tbsp finely chopped chives, plus extra to garnish
  • 2 oz (60 g) shaved Manchego cheese, plus extra to garnish

INSTRUCTIONS
  1. Preheat grill to medium-high.
  2. Whisk olive oil with lime juice, honey, and salt in a large bowl until combined. Season generously with pepper and set aside.
  3. Oil grate, then place corn on grill. Cook, with lid closed, turning cobs often, until corn is lightly charred and kernels are cooked through, about 8 to 10 minutes. Transfer to a plate and let it cool to room temperature, at least 30 minutes.
  4. Using a sharp knife, remove kernels from corn cobs. Add to dressing along with tomatoes, cilantro, chives, and Manchego. Toss to combine. Transfer to a serving platter, then garnish more herbs and Manchego. Season with additional pepper. Serve immediately.
