Butterscotch Squares

These butterscotch squares usually disappear before they’ve had a chance to cool. Chewy, buttery and deeply caramel-like in flavor, they come together in a single saucepan with almost no effort. Add the nuts for a little texture or raisins for something a bit more old-fashioned – either way, they’re exactly right.

INGREDIENTS
  • ¼ cup unsalted butter
  • 1 cup old-fashioned brown sugar, firmly packed
  • 1 large egg
  • 1½ tsp vanilla extract
  • ¾ cup all-purpose flour
  • 1 tsp baking powder
  • ½ cup chopped walnuts or raisins

INSTRUCTIONS
  1. Position rack in the center of the oven. Preheat to 350°F. Butter an 8-in square baking pan.
  2. Melt butter with brown sugar in a medium saucepan over low heat, stirring until well blended. Remove from heat. Add egg and beat well, then stir in vanilla.
  3. Whisk flour with baking powder in a small bowl. Add flour-mixture to saucepan and stir until just combined. Fold in nuts or raisins. Pour into prepared pan and smooth top.
  4. Bake in center of oven until a tester inserted into the center comes out clean, about 25 minutes. Transfer to a wire rack and let cool slightly, 20 minutes. Cut into squares while still warm. Serve at room temperature.

How to Store It

Squares will keep in an airtight container at room temperature for up to 4 days.
