Breakfast Sandwiches with Avocado and Fresh Mozzarella

Is there anything better than a breakfast sandwich?

Whether you stayed out a bit too late the night before or simply want to treat yourself, you cannot go wrong with this early AM delicacy. And our version might be the best of the best: fresh mozzarella, avocado, and herb-filled dressing all mingle perfectly with crispy bacon for a delightful breakfast bite (cut the bacon if you’re vegetarian for an equally delicious result).

INGREDIENTS
  • 6 slices thick-cut bacon (optional)
  • ¼ cup mayonnaise
  • 2 tbsp 5% Greek yogurt
  • 1 tbsp very finely chopped chives
  • 1 tbsp very finely chopped cilantro
  • ½ tsp very finely chopped tarragon
  • ½ tsp fresh lemon juice
  • ¼ tsp kosher salt, divided
  • Freshly ground black pepper
  • 1 tbsp olive oil
  • 2 large eggs
  • 2 sesame buns, split and warmed
  • ½ ripe avocado, thinly sliced
  • ½ ball (250 g) fresh mozzarella, thinly sliced
  • Microgreens, to garnish

INSTRUCTIONS
  1. Arrange rack in center of oven. Preheat to 375°F. Line a large, rimmed baking sheet with parchment.
  2. Arrange bacon in a single layer on prepared baking sheet, if using. Bake in center of oven until crisp, approximately 20 to 25 minutes. Carefully transfer each slice to a paper towel-lined plate to drain.
  3. Meanwhile, using an immersion blender, blitz mayonnaise with yogurt, chives, cilantro, tarragon, lemon juice, and ⅛ tsp salt until smooth and fully combined (some flecks will remain). Season with black pepper. Set aside.
  4. Heat oil in a medium frying pan over medium-high heat. Once shimmering, crack in eggs. Cover with a lid or foil and continue cooking until whites are set with crisp edges but yolks are still soft, about 2 minutes. Remove from heat, then season with remaining ⅛ tsp salt and freshly ground pepper.
  5. Smear the tops and bottoms of buns with mayonnaise-mixture. Sandwich each one with bacon, avocado, mozzarella, egg, and microgreens. Serve immediately.
