Apple-Plum Crumble

Crumbles are a fuss-free dessert worthy of fall entertaining, and this version uses peak-season fruit.

If you’re not making this right when the different varieties of plums are available, follow the weight guidelines as the grocery story types tend to be smaller. If you’re lucky enough to make this with tree-ripened fruit, looks for varieties like Vampire plums which have the brightest hues.

INGREDIENTS
For the apple-plum filling
  • 3 large Honeycrisp apples, about 2 lbs (907 g), peeled and sliced ¼-inch thick
  • 3 large red plums, about 1 lb (454 g), pitted and cut into
  • ¾-inch pieces
  • ½ cup granulated sugar
  • ¼ cup dark brown sugar, lightly packed
  • ¼ cup all-purpose flour
  • 1 tbsp fresh strained lemon juice
  • ½ tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp ginger
  • ¼ tsp allspice
  • ¼ tsp kosher salt
For the crumble topping
  • 1 cup all-purpose flour
  • 1 cup oat flakes
  • ½ cup granulated sugar
  • 2 tbsp dark brown sugar, lightly packed
  • ¼ tsp kosher salt
  • ½ cup plus 2 tbsp cold unsalted butter, diced, divided
  • Vanilla bean ice cream, for serving

INSTRUCTIONS
  1. Arrange rack in center of oven, then preheat to 350°F.
  2. For the apple-plum filling, add all ingredients to a large bowl. Stir until fruit is well coated and mixture is fully combined. Set aside and let stand while preparing filling.
  3. For the crumble topping, combine flour, oats, sugars, and salt in a small bowl. Using fingers, crumble in ½ cup butter until mixture forms small clusters with some sandy texture. Set aside.
  4. Scrape fruit mixture and any juices into an 11 x 8-inch (2.3 L) oval baking dish. Scatter over remaining 2 tbsp butter. Sprinkle crumble topping over fruit mixture, ensuring fruit is evenly covered
  5. Bake in the center of oven until the topping is golden-brown and edges are bubbling, approximately 1 hour to 1 hour 10 minutes. Transfer to a rack to cool slightly, about 20 minutes.
  6. To serve, divide crumble between plates and top with a scoop of vanilla bean ice cream. Serve immediately.
