INGREDIENTS
  • 8 cups thinly sliced red cabbage, about 1/4-inch thick
  • 1 cup good-quality apple cider
  • ⅓ cup raw, unfiltered apple cider vinegar
  • 2 tbsp granulated sugar
  • 2 thyme sprigs, plus extra to garnish
  • 5 whole allspice berries
  • 1 small cinnamon stick
  • 1 bay leaf
  • 1 tsp kosher salt
  • Freshly ground black pepper

INSTRUCTIONS
  1. In a large Dutch oven or pot, combine all ingredients. Bring liquid on the bottom to a boil over medium-high heat. Cover with a lid and reduce heat to medium-low. Simmer, stirring occasionally, until cabbage is deep purple and most of the liquid is absorbed, about 40 to 45 minutes. Remove thyme sprigs, whole spices, and bay leaf before serving.
