Any Fruit Summer Crisp

A crisp works with almost any fruit in season, which is half the appeal.

We love strawberry-blackberry, cherry-raspberry, and peach-blueberry – but a single fruit works just as well. A little almond extract, a pinch of cinnamon, or some grated citrus zest in the filling takes it somewhere even better.

INGREDIENTS
For the filling
  • 3 cups halved strawberries, or pitted and halved cherries, or diced peaches
  • 3 cups blackberries, or raspberries, or blueberries
  • ⅔ cup granulated sugar
  • ⅓ cup all-purpose flour
  • 2 tsp fresh strained lemon juice
  • 1 tsp vanilla extract
For the crumble topping
  • 1 cup all-purpose flour
  • 1 cup large-flake oats
  • ½ cup sliced almonds
  • ½ cup granulated sugar
  • ½ cup cold, unsalted butter, diced, plus extra for greasing pan
  • ¼ tsp kosher salt
  • Vanilla ice cream for serving

INSTRUCTIONS
  1. Arrange rack in center of oven, then preheat to 350°F. Butter a 9-inch pie plate.
  2. For the filling, add all ingredients to a large bowl. Stir until fruit is well coated and mixture is fully combined. Set aside and let stand while preparing filling.
  3. For the crumble topping, combine flour, oats, almonds, sugar, and salt in a small bowl. Using fingers, crumble in butter until mixture forms small clusters with some sandy texture. Set aside.
  4. Scrape fruit mixture and any juices into prepared pie plate. Sprinkle crisp topping over fruit mixture, ensuring fruit is evenly covered.
  5. Bake in the center of oven until the topping is golden-brown and edges are bubbling, approximately 1 hour to 1 hour 10 minutes. Transfer to a rack to cool slightly, about 20 minutes.
  6. To serve, divide crumble between plates and top with a scoop of ice cream. Serve immediately.
